Guar gum (E412) is extracted from the endosperm of the seeds of the guar plant (Cyamopsis tetragonolobus). The plant is native from the arid and semi-arid regions of the Indian sub-continent. Like locust bean gum and tara gum, guar gum is a galactomannan, comprising approximately 34% of galactose (for comparison, locust bean gum (E410) contains about 20%, tara gum (E417) about 25% of galactose). Guar gum is partly soluble in cold water. Like locust bean gum, it has a gelling effect together with xanthan and increases the gelling properties of agar (E406) and carrageenan (E407).
