Locust bean gum (E410) is extracted from the endosperm of the seeds of the locust tree Ceratonia siliquae which is evergreen and leguminous. The plant is native from Syria and Asia Minor, the locust bean has been cultivated since antiquity in the Mediterranean basin. Like guar gum and tara gum, locust bean gum is a galactomannan, comprising approximately 20% of galactose (for comparison, guar gum (E412) contains about 34%, tara gum (E417) about 25% of galactose).
